In the low desert, select a rhizome purchased from a nursery or farmers market and plant in late March and April. Fill a large pot, one with a volume at least four times the size of your rhizome, with rich, organic potting soil, and plant the rhizome lying flat, 2 inches deep.

Can you plant ginger root from the grocery store?
Ginger purchased from the produce department of your local grocery store can be used to grow a plant, but with spotty results. Grocery store ginger is often sprayed with a growth inhibitor to keep it from sprouting before it's purchased. That inhibitor also keeps it from sprouting when you stick it in a pot of soil.
How long does Ginger take to grow?
When you plant a ginger root (which is really a rhizome), it takes about 2-3 years for it to be mature enough to harvest. The older it is, the better the flavour. Sprouting a ginger rhizome for planting takes a few weeks.
Does ginger plant need sun or shade?
Ginger thrives best in warm, humid climates. Choose a site that provides plenty of light, including 2 to 5 hours of direct sunlight. Ideal spots are also protected from strong winds.
Does ginger come back every year?
You may or may not be able to keep it alive over winter, depending on where you are. Definitely move it inside at the first signs of cold weather. Once the leaves die back keep it reasonably dry and cool or the tubers will rot, and with a bit of luck your ginger may grow back next year.
